This is the Nova Scotia version of a gyro/shawarma/doner kebab. It’s called a donair and it’s topped with a garlic-and-condensed milk sauce. Much tastier than it sounds. Someday, after I’ve earned a few Pulitzers, I’m going to make a coffee table book of kebabs from around the world. It’ll be goddamn amazing.
You should tour the Middle East. They’re called shawarma and are a bit different than the Turkish doner. If you ever go to the UAE, I’ll guide you to a place that makes the best Hassan Matar, a sandwich, that as far as I know, is indigenous to the UAE.
